This is a 7.5-inch tall-heeled, hidden tang chef’s knife built to handle serious prep.

With a 2 ¾-inch heel, it offers generous knuckle clearance — ideal for larger hands or for breaking down dense root vegetables, squash, and thick produce. The added height gives leverage and authority through hard chopping, while the profile tapers into a refined tip for detail work, fine slicing, and controlled prep on smaller vegetables.

It’s an all-around chef’s knife designed to move seamlessly from heavy board work to precision cuts.

Materials & Construction

80Crv2 high-carbon steel blade: Forged from 80CrV2, a tough high-carbon Swedish saw blade steel known for edge stability and resilience. It takes a keen edge, holds it well, and stands up to demanding kitchen work.

Dyed Maple Burl wood handle: The handle pairs a 4,000-year-old stabilized bog oak bolster with a double-dyed blue and gold maple burl body, separated by a pure copper spacer for a clean, intentional transition between materials. The warmth of the copper plays beautifully against the deep blues and gold figuring in the burl, while the ancient bog oak grounds the piece with dark, understated contrast. The combination feels refined and cohesive — classic, but with character. All materials have been professionally stabilized for long-term durability in a working kitchen.

Brute de Forge finish: French for "rough from the forge", the textured area of the blade, near the spine, is a natural oxide layer on the steel formed during hand-forging and heat treatment. It preserves the character of each hammer strike, creating a unique surface pattern that contrasts beautifully with the knife’s polished edge and bevel.

Hidden tang: The hidden tang disappears into a continuous wooden handle, giving the knife an organic, balanced feel in the hand with clean lines and purposeful construction.

Care Info

High-carbon steel offers incredible sharpness and character, but it requires a little extra care. Treat your knife like a cast-iron skillet: use it often, keep it clean and dry, and it will reward you for a lifetime.

Important key tip — Always wipe and dry your knife frequently while cooking to maintain your knife's longevity and performance.

Basic High Carbon Steel Knife Care

  • Always keep your knife blade dry and clean.
  • Keep the wooden handle dry to prevent cracking or splitting.
  • Wash with warm soapy water - no abrasive sponges or pads.
  • Regularly maintain the edge with a leather strop or honing rod (steel or ceramic) to keep it sharp.
